EASY Baba Ganoush

Why you'll LOVE IT:

Baba Ganoush is similar to hummus but made with roasted eggplant instead of chickpeas. Simple and so delicious!




Lemon Juice


Olive oil

Cut the eggplant in half from top to bottom and then rub the inside with 1 tablespoon of olive oil.

Place the 2 halves, cut side down, on the prepared baking sheet and bake until they are fork tender

Remove the flesh using a spoon

Add the eggplant flesh to a food processor with remaining ingredients

Pulse until the mixture is well combinedSeason with salt and pepper.

Serve with veggies, pita or whatever you prefer for dipping!
