Cheesy Butternut Squash Orzo Pasta

This cheesy orzo skillet is so simple to make and a wonderful autumnal dinner! It's filling and delicious reheated too!

Place cubed butternut squash on a large baking sheet and drizzle with olive oil

Sprinkle with salt and pepper, toss, and bake for 25 minutes

Heat olive oil in a large skillet and saute the onion for 5 minutes

Add in garlic & thyme and stir. Then pour in veggie broth

Once boiling, mix in broccoli and orzo pasta

Simmer for 7 minutes or until pasta is tender and has absorbed most of the liquid. Stir in cheese

Mix in the butternut squash and ENJOY!!
