Chicken Saltimbocca
Why you'll LOVE IT:
It's a classic dish made with chicken instead of veal and it's surprisingly EASY to make. A fancy dish that easy to make!
Sprinkle 4 cutlets with salt and pepper. Plus freshly minced sage on top of each and then top with a slice of prosciutto

Prep the chicken
Place a sage leaf on top and use a toothpick to hold the prosciutto and sage onto the chicken.

Add more sage
Cook the chicken, prosciutto side down, for 3-4 minutes, flip, and continue to cook until the chicken is cooked through. Set aside.

Cook the chicken
In the same pan, saute shallot for a few minutes and then stir in a little flour before deglazing the pan.

Make the sauce
Add in broth and white wine to deglaze and scrape up all of the flavorful bits from the pan.

Make the sauce
Add in lemon juice, parsley, and butter. Bring to a simmer and let reduce for a few minutes before adding the chicken back in. SO GOOD!
