Creamy Vegan Tomato Pasta

This vegan recipe is so easy to make and I love that it comes together in ONE POT! So creamy and delicious
Start out by soaking your cashews to make the sauce extra creamy!
Saute the bell pepper and zucchini in a little oil until tender and then add in garlic. Set aside.
Combine soaked and drained cashews, diced tomatoes, spices, salt, and pepper in a blender. Blend until smooth
Add in the water + sauce and simmer. Add in the pasta and cook until al dente
Add veggies back in + sun dried tomatoes. Toss to combine
Serve with my black pepper and ENJOY! Great for meal prep too!
