Creamy Vegan Pasta

This vegan pasta dish is great for special occasions are even easy weeknight meals!
Start by cooking pasta of choice until al dente.
Cook onion until translucent, about 8 minutes. Add in the garlic and cook 2 more minutes. Add to blender
Add in soaked cashews, water, sea salt, Italian seasoning, and pepper. Blend until smooth
Saute the mushrooms until soft
Add in the cashew sauce and bring to a simmer. Stir in pasta and sun dried tomatoes and stir
Serve immediately and ENJOY! Great as leftovers as well!
