This ramen is fully vegan and simple to make at home. It's comforting, filling, and so so delicious!
Start out by sautéing the bok choy until browned and then pan frying the tofu. set aside
In a pot, add in the green onion, ginger, onion, and garlic. Sauté for 5 minutes.
Add in mushrooms and cook for 3 additional minutes. Mix in broth, miso and soy sauce
Add in the ramen noodles and cook for 2-4 more minutes
Top with the tofu, bok choy, and other desired toppings. ENJOY!
