Jackfruit Enchiladas

These Jackruit Enchiladas are simple to make and such a great meat free option that everyone will love!

Cut the hard ends off of the canned jackfruit. In a large skillet, saute onion and garlic.


Add in shredded jackfruit, green chiles, and salt. Stir and saute for a few minutes.


Spread enchilada sauce on a tortilla, add black beans and jackfruit mixture and roll up.


Bake for 20 minutes and then top with your favorite toppings before serving!
