Black Bean Stuffed Sweet Potatoes

Roast the potatoes in the oven for 45 minutes or until tender in the middle.

Saute the onion in a little olive oil over medium heat until its translucent.

Add in the spices: garlic powder, onion powder, cumin, chili powder, and salt. Stir to combine
Add in the black beans and stir to combine. Cook until heated through.

Mash the inside of the sweet potato
Mash the potato
Stuff the sweet potato with the black bean mixture, avocado and any other desired toppings
