HOW TO MAKE

SWEET POTATO GNOCCHI

STEP 1

Cook your sweet potatoes. I like to bake mine but you can cook them any way you prefer!

STEP 2

Combine the flour & salt.

STEP 3

Pour onto a clean surface and make a well in the middle.

STEP 4

Mash your sweet potato and add to the flour. I used a ricer but you can mash it with a fork.

STEP 5

Mix together until a dough forms. It should be a little sticky but should not stick to your hands. Add more flour if it does.

STEP 6

Divide the dough and roll it out into long strands.

STEP 7

Cut pieces that are roughly 1 inch thick. Grooves are optional but help the sauce stick

STEP 8

Boil water and then drop gnocchi in. Cook until they start to float to the top, just a few minutes. Remove with slotted spoon

STEP 9

Optional but HIGHLY recommended: make a sage butter sauce (basically just butter, sage, and garlic)

STEP 10

Toss cooked gnocchi in the sauce.
