Saute the tofu in a little oil until crispy on all sides. Set aside

Saute garlic, sweet potato and cauliflower

Add in spices and mix to combine

Mix in coconut milk, broth, almond butter, soy sauce, s + p

Finally stir in snap peas and bell pepper

Add the tofu back in and stir to combine everything!
