Vegan Split Pea Soup

This spit pea soup is vegan and fully plant based! It's packed with nutrients and so very filling! Everyone will love this soup!

Sauté onion, carrot, and celery over medium heat until the veggies begin to soften

Add in broth, green split peas, bay leaf, thyme, and cumin. Bring to a boil and simmer for  an hour.

Stir in the salt and pepper and cook for 5 more minutes

Ladle into bowls and serve with crackers, cornbread or grilled cheese. Enjoy!

Makes delicious leftovers and reheats well! Great for meal prep!
