Instructions
Preheat the oven to 350 degrees F and spray 2 6 inch cake pans with cooking oil. I also like to line them with parchment paper for easy removal.
Start by whisking together the dry ingredients in a medium bowl: flour, baking soda, and salt.
1 ½ cups all purpose flour, 1 teaspoon baking soda, Pinch salt
In a large bowl, whisk together the wet ingredients: pumpkin puree, apple sauce, peanut butter, egg, and milk. Once fully combined, fold in the dry ingredients.
¾ cup pumpkin puree, ½ cup applesauce, ⅓ cup natural peanut butter, 1 large egg, 3 tablespoons milk
Divide the batter evenly between the 2 cake pans and bake for 20-25 minutes or until the cakes are set and a toothpick inserted in the middle comes out clean. Let the cakes cool completely before icing.
Make the icing by whisking together the yogurt and peanut butter.
1 cup plain yogurt, ½ cup peanut butter*
Ice the cake and decorate as desired!

Notes
e notes:For the frosting, you could replace the peanut butter with several other things as desired such as pumpkin, sweet potato, pureed fruit etc. Sometimes using different fruits is fun because it gives the frosting a different color!
