2cans of lentilsdrained and rinsed

1teaspoongarlic powder
½teaspoononion powder
1teaspoonof fine sea salt
Black pepper to taste
1bunch of kale
½teaspoonolive oil
1tablespoonlemon juice
Instructions
Preheat the oven to 400 degrees F.
On a large baking tray (or 2 trays as needed so that the veggies are not overcrowded), add on the cauliflower and sweet potatoes.. Drizzle the veggies with olive oil and sprinkle on the garlic powder, onion powder, salt, and pepper. Toss so that everything is covered in oil.
Bake in the oven for 20 minutes, tossing halfway, until lightly browned.
Toss the lentils onto the baking tray and roast for 20 more minutes or until sweet potatoes are tender and lightly browned.
Meanwhile, massage the kale by placing it in a large bowl and then drizzling on the olive oil and lemon juice. Using your hands, massage the kale for 2 minutes until it’s much softer and more tender.
Make the dressing by whisking together all of the ingredients in a small bowl or measuring cup.
Assemble the bowls by dividing the veggies/ lentils + kale evenly among 4 bowls. Drizzle with the dressing and enjoy!
Notes
Storage: Store the roasted veggies and lentils, kale, and dressing in separate airtight containers in the fridge for up to 4 days. Reheat the veggies and lentils in the oven or microwave, or enjoy them cold.
