Orange Marmalade Vegan Muffins

Ingredients
1 ¼
cup
of
whole wheat pastry flour
pinch
of salt
½
teaspoon
of baking soda
¼
teaspoon
of baking powder
1
tablespoon
of cornstarch
⅔
cup
of orange marmalade
¼
cup
of agave nectar
2
tablespoons
of coconut oil
could also use canola oil
2
teaspoons
of vanilla extract
½
cup
of almond milk
½
cup
of
dairy free chocolate chips
Instructions
Pre-heat the oven to 350 degrees F.
Line of grease a standard sized muffin tin and set aside.
In a large bowl, sift together the flour, baking soda, baking flour, cornstarch, and salt. Set aside.
In a medium bowl, mix together the marmalade, agave nectar, oil, vanilla extract, and milk.
Pour the wet ingredients into the dry ingredients and fold in until just mixed together. Be careful not to over stir! Fold in the chocolate chips.
Pour the batter evenly into the muffin cups and bake for 15-17 minutes or until a toothpick inserted into the middle comes out clean.
Let cool briefly and ENJOY!!
