Creamy peanut tofu noodles tossed with crispy air fryer tofu and veggies. This easy peanut noodle recipe is packed with flavor, ready fast, and perfect for weeknights!
214–16 oz blocks super-firm tofu, torn into chunks
1 ½tablespoonsolive oil
3tablespoonssoy sauceor tamari
¼cupcornstarch
½teaspoongarlic powder
½teaspoononion powder
½teaspoonsea salt
¼teaspoonof black pepper
For the peanut sauce
⅓cupnatural creamy peanut butter
¼cupsoy sauceor tamari
3tablespoonsmaple syrup or honey
1 ½tablespoonsrice vinegar
1 ½tablespoonssesame oil
3clovesgarlicfinely minced
½tablespoonfresh gingergrated (or ½ teaspoon ground ginger)
½cup warm waterto thin as needed
For the noodles & veggies
1poundpasta of choiceI love the Trader Joe's Thai Wheat noodles for this but spaghetti also works well
12ozbag Trader Joe’s Ready Veggiesor other mixed veggies
½cupshredded carrots
1tablespoonneutral oiloptional, for sautéing veggies

Instructions
Make the air fryer tofu
Preheat your air fryer to 400°F.
In a large bowl, toss the cubed tofu with olive oil, soy sauce, cornstarch, garlic powder, and onion powder until evenly coated.
Arrange tofu in a single layer in the air fryer basket. Air fry for 13–15 minutes, shaking halfway through, until golden and crispy on the edges. Set aside.
Make the peanut sauce
In a medium bowl or jar, whisk together the peanut butter, soy sauce, maple syrup, rice vinegar, sesame oil, garlic, and ginger.
Slowly whisk in warm water until the sauce reaches a smooth, pourable consistency.
Cook the noodles + vegetables
Bring a large pot of water to a boil. Cook the noodles according to package instructions. Drain and toss with the peanut sauce.
Heat a large skillet or wok over medium-high heat. Add the veggies (and 1 tablespoon oil if needed).
Cook for 4–6 minutes, stirring often, until heated through and slightly tender but still crisp.
Add the cooked noodles to the skillet with the veggies and toss to combine.
Serve with the crispy air fryer tofu topped with green onions, sesame seeds, and chili crisp if desired.
