½of a red onionthinly sliced
½cupof diced tomatoes
1small green bell pepperchopped (about 1 cup)
optional: 1 can of sliced black olivesmine was 6 ounces
¼cupof chopped fresh parsley
⅓cupof olive oil
2tablespoonsof white balsamic vinegar
½tspof Italian seasoning
1tspof garlic powder
1tspof onion powder
¼tspof crushed red pepper
Salt and pepper to taste
Pinchof sugar
Instructions
Cook your pasta according to package directions. Drain and set aside. If serving the pasta salad cold, run the cooked pasta under cold water to cool it off quite a bit.
Make the dressing by combining the olive oil, vinegar, Italian seasoning + other spices, and sugar. Whisk until fully combined.
In a large bowl, combine the cooked pasta, veggies, parsley and dressing. Toss until the pasta and veggies are fully coated in the dressing.
