We’re sharing our famous vegetarian past salad recipes as well as 20 more of our favorite vegetarian pasta recipes!


Units Scale
  • 1 pound of spiral pasta, I like the tri-color but regular is fine too!
  • 1/2 of a red onion, thinly sliced
  • 1/2 cup of diced tomatoes
  • 1 small green bell pepper, chopped (about 1 cup)
  • optional: 1 can of sliced black olives (mine was 6 ounces)
  • 1/4 cup of chopped fresh parsley
  • 1/3 cup of olive oil
  • 2 tablespoons of white balsamic vinegar
  • 1/2 tsp of Italian seasoning
  • 1 tsp of garlic powder
  • 1 tsp of onion powder
  • 1/4 tsp of crushed red pepper
  • Salt and pepper to taste
  • Pinch of sugar


  1. Cook your pasta according to package directions. Drain and set aside. If serving the pasta salad cold, run the cooked pasta under cold water to cool it off quite a bit.
  2. Make the dressing by combining the olive oil, vinegar, Italian seasoning + other spices, and sugar. Whisk until fully combined.
  3. In a large bowl, combine the cooked pasta, veggies, parsley and dressing. Toss until the pasta and veggies are fully coated in the dressing.
  4. Salt and pepper to taste and ENJOY!!!
