Ingredients

  • 1 pound of spiral pasta I like the tri-color but regular is fine too!
  • ½ of a red onion thinly sliced
  • ½ cup of diced tomatoes
  • 1 small green bell pepper chopped (about 1 cup)
  • optional: 1 can of sliced black olives mine was 6 ounces
  • ¼ cup of chopped fresh parsley
  • cup of olive oil
  • 2 tablespoons of white balsamic vinegar
  • ½ tsp of Italian seasoning
  • 1 tsp of garlic powder
  • 1 tsp of onion powder
  • ¼ tsp of crushed red pepper
  • Salt and pepper to taste
  • Pinch of sugar

Instructions

  • Cook your pasta according to package directions. Drain and set aside. If serving the pasta salad cold, run the cooked pasta under cold water to cool it off quite a bit.
  • Make the dressing by combining the olive oil, vinegar, Italian seasoning + other spices, and sugar. Whisk until fully combined.
  • In a large bowl, combine the cooked pasta, veggies, parsley and dressing. Toss until the pasta and veggies are fully coated in the dressing.
  • Salt and pepper to taste and ENJOY!!!
