Zucchini Hummus

  • 1 medium zucchini, trimmed and roughly chopped
  • 3 cloves of garlic
  • 1 15 ounce can of chickpeas, drained and rinsed
  • 2 tablespoons of lemon juice
  • 2 tablespoons of tahini
  • 1/4 cup of olive oil + more if desired
  • salt and pepper to taste


  1. In a food processor or blender, place all of the ingredients.
  2. Blend until fully combined and creamy. Takes about a minute of blending.
  3. Serve and enjoy!!
  4. Store in the fridge for up to a week
