Storage Containers:

🥡 I bought a multi-pack of THESE Snapware containers (affiliate link) at Costco a year ago and we really love them. This particular 5.5 cup size is my favorite as it allows me to fit a complete serving of a meal without it being too crowded.

Meal Prep Tips:

I like to do my grocery shopping on the same day that I meal prep or else some things will get lost in the abyss that is my fridge.

  • Peanut Noodles + Tofu: This is a SUPER quick 20 minute dinner which I figured was perfect for Monday. To prep, you could pre-make the peanut sauce and prep the tofu/ other protein.
  • Taco Salad: Chop veggies (minus avocado) and pre-make the simple dressing. You could also go ahead and make the taco “meat”.
  • Brothy Beans: this is a great recipe to fully prep ahead of time. But if not, you could go ahead and prep the onion and soak the beans. This one is SUPER easy but does take quite a bit of cook time so be prepared!
  • Hummus Bowls: You could pre-roast the veggies or just go ahead and have them chopped up.
  • Tortellini Soup: Measure out spices and chop the onion.
  • BONUS: I thought this would be a fun Vday project for the weekend :)
