This simple Date Bark is so easy to make and a fun twist on a classic recipe! The dates are packed with sweetness and make for such a delicious treat or snack!
It’s no secret that I’m OBSESSED with dates! I have a ton of medjool date recipes on my blog and I’m always excited to find a new one. I even wrote a WHOLE blog post about dates.
So, I was very excited to see a date recipe going viral on social media last month and of course I hopped on that band wagon pretty quick :)
Dates + peanut butter + chocolate is simple a trip made in HEAVEN!
The idea for this bark is pretty simple. Lay about 12-15 dates flat on a piece of parchment paper and flatten them as best you can so that they create a sheet of dates. I did this by placing a second piece of parchment on top of the dates and then flattening them with a measuring cup (see video for reference).
Once it’s flatteneded, simple add whatever toppings you would like. I went for peanut butter, chopped peanuts, melted chocolate + a little sprinkle of sea salt.
That’s it! It’s a super simple recipe but I really love how it turned out and it’s a viral recipe that’s definitely worth the hype!
ALRIGHT that’s it for today! As always, if you end up making this apple butter, please snap a quick photo and tag me on Instagram @foodwithfeeling! I always LOVE to see what you’re making from the blog.
Date Bark
Ingredients
- 12-15 medjool dates pitted
- 3 tablespoons of peanut butter
- handful of chopped peanuts roasted as desired
- ½ cup of chocolate chips/ chunks
- 1 teaspoon of coconut oil
- optional for sprinkling: sea salt flakes
Instructions
- Place the chocolate and coconut oil in a bowl and melt in the microwave in 20 second increments, stirring in between.
- Flatten the dates gently with your fingers and then place them on a piece of parchment paper so that they’re all lined up in a rough rectangle.
- Place another piece of parchment paper on top and flatten the dates together so that you end up with a solid sheet of dates with very few gaps (some holes are totally fine).
- Remove the top parchment paper and layer on the toppings. Spread the peanut butter out, followed by the peanuts. Drizzle the melted chocolate over the top and use a spoon or spatula to cover the surface of the dates with the chocolate. Sprinkle with sea salt.
- Place in the freezer for 20 minutes or until the chocolate is hardened. Cut into bite sized pieces and ENJOY!
- Store leftovers in an air tight container in the freezer for up to 3 monhts.
