3 Ingredient Watermelon Popsicles

It’s no secret that I’m obsessed with watermelon. I get at LEAST one watermelon a week and sometimes that isn’t even enough in our house.  So naturally, I was super excited at the opportunity to partner with the National Watermelon Promotion Board to make a fun and easy on-the-go watermelon recipe for you!

Hello 3 Ingredient Watermelon Popsicles that I want to take with me everywhere (especially in this hot southern summer!)!

3 Ingredient Watermelon Popsicles

When Jemma started exploring solid foods, I was so excited to share my love of watermelon with her as well. It’s safe to say that she loves it as much as I do. Exhibit A:

But, I digress a bit. We’re talking about how watermelon makes for the PERFECT ingredient for on the go snacks. It’s refreshing, sweet, easily adaptable, AND affordable. Did you know that watermelon is the best value in the fruit based produce section coming in at only 17 cents per serving. YES, PLEASE!

Today we’re talking about these on-the-go 3 Ingredient Watermelon Popsicles! They’re SO good and ridiculously easy.

The filling for the popsicles is simply watermelon, water (I used coconut water), and a little bit of maple syrup. Everything is blended up before being poured into into your sleeves/ molds.

I had planned to buy the disposable plastic sleeves to put these in. Similar to the ones used with the pre-made ice pops you can buy at the store. But since we’re trying really hard to use less plastics in that way, I found these awesome molds on amazon that I’m in love with! They’re easy to use and maybe more importantly, they’re easy to clean.

I placed several of the molds in a cup to hold them up and then used a little funnel to get the watermelon mixture into the molds. Then you pop the top on and throw them in the freezer until solid.

I’ve been loving these watermelon popsicles for on the go snacks. They can either be placed in a small cooler or simply enjoyed soon after taking them on the go.

Ingredients 

  • 2 cups of Watermelon, roughly cubed
  • 1 cup of Coconut water, regular water or other flavored water also works just fine
  • 1 tablespoon of maple syrup, or other liquid sweetener

Instructions 

  • Place all of your ingredients in a blender and blend until smooth.
  • Pour the mixture into 6 popsicle molds/ baggies and place in the freezer for at least 6 hours.
  • ENJOY! When taking these in a cooler on the go, hold the popsilce molds in your hands for a few minutes. This will help warm up the popsicle so that it's easier to get out of the mold!
