I missed a few weeks of sending these meal plans and I’m so sorry for the inconsistency! If that ever happens OR if you just aren’t vibing with the current meal plan, you can check out other recipes on my blog. Storage Containers:

🥡 I bought a multi-pack of THESE Snapware containers (affiliate link) at Costco a year ago and we really love them. This particular 5.5 cup size is my favorite as it allows me to fit a complete serving of a meal without it being too crowded.

Meal Prep Tips:
  • I like to do my grocery shopping on the same day that I meal prep or else some things will get lost in the abyss that is my fridge.
  • Monday: This recipe is DELICIOUS prepped ahead of time. Alternatively, you can measure out the spices and prepare some of the other ingredients + chop the veggies so cookin goes quickly.
  • Tuesday: these are best made night of but you could pre-shred the tofu.
  • Wednesday: pre-chop the veggies as desired.
  • Thursday: I love to set this to cook in the crockpot while I work and then dinner is ready to go with very little work!
  • BONUS: this is a great meal-prep recipe for breakfast!
