Another week, another amazing meal plan! I hope by now you’ve found some new favorite that you find yourself making on repeat (I’d love to know what they are!). Here’s the weeks plan!

Here’s what we’ve got this week:

Storage Containers:

🥡 I bought a multi-pack of THESE Snapware containers (affiliate link) at Costco a year ago and we really love them. This particular 5.5 cup size is my favorite as it allows me to fit a complete serving of a meal without it being too crowded.

Meal Prep Tips:

I like to do my grocery shopping on the same day that I meal prep or else some things will get lost in the abyss that is my fridge.

  • Monday: make the hummus (if not using store bought) and chop/ roast the veggies.
  • Tuesday: you can go ahead and chop up the veggies. As desired, you could also go ahead and roast the cauliflower and garlic.
  • Wednesday: pre-make the rice and cook the veggies. You can go ahead and press the tofu as needed and make the sauce for the tofu.
  • Thursday: You can go ahead and shop the veggies (and even roast them ahead of time as desired).
  • Friday: these are best made night of!
  • BONUS: this recipe is BEST meal prepped ahead of time. It gets better with time and is amazing for lunches throughout the week.
