Another week, another amazing meal plan! I hope by now you’ve found some new favorite that you find yourself making on repeat (I’d love to know what they are!). Here’s the weeks plan!

Storage Containers:
🥡 I bought a multi-pack of THESE Snapware containers (affiliate link) at Costco a year ago and we really love them. This particular 5.5 cup size is my favorite as it allows me to fit a complete serving of a meal without it being too crowded.
Meal Prep Tips:
I like to do my grocery shopping on the same day that I meal prep or else some things will get lost in the abyss that is my fridge.
- Monday: make the hummus (if not using store bought) and chop/ roast the veggies.
- Tuesday: you can go ahead and chop up the veggies. As desired, you could also go ahead and roast the cauliflower and garlic.
- Wednesday: pre-make the rice and cook the veggies. You can go ahead and press the tofu as needed and make the sauce for the tofu.
- Thursday: You can go ahead and shop the veggies (and even roast them ahead of time as desired).
- Friday: these are best made night of!
- BONUS: this recipe is BEST meal prepped ahead of time. It gets better with time and is amazing for lunches throughout the week.
