I hope you’re enjoying the 2nd half of summer and it’s not TOO hot where you are. Here in Portland, we had a LOT of wildfire smoke and a heat wave so I spent most of my time inside.

Meal Prep Tips:
I like to do my grocery shopping on the same day that I meal prep or else some things will get lost in the abyss that is my fridge.
Make it ahead = tips to cook/ meal prep the recipe ahead of time.
Component prep = ideas for dicing veggies etc to make weeknight meals fast and easy!
- Gochujang Tofu
- Make it ahead: The full stir fry keeps for up to 4 days — reheat in a skillet over medium heat to revive the tofu. Cook a big batch of rice at the start of the week to serve alongside.
- Component prep: Whisk together the gochujang sauce and store in a jar in the fridge. Press and cube the tofu the night before and store uncovered on a paper towel-lined plate for extra crispiness. Julienne the carrot and thaw the edamame.
- Vodka Butter Beans
- Make it ahead: Keeps well for up to 4 days — reheat gently on the stovetop with a splash of milk to loosen the sauce. Pick up some crusty bread to serve with it!
- Component prep: Blend the silken tofu, milk, and ½ cup of beans until completely smooth and store in the fridge — this is the biggest time saver. Dice the shallot and mince the garlic.
- Black Bean Soup
- Make it ahead: This one is the ultimate make-ahead — make the full pot on Sunday and it gets better every day. Keeps for up to 5 days in the fridge and freezes beautifully.
- Component prep: Dice the onion and carrot, slice the celery, and mince the garlic. Store together in the fridge. Day of, it’s just dumping everything in a pot and simmering for 20 minutes.
- Lemon Pasta
- Make it ahead: Best made fresh — the sauce thickens quickly as it cools and doesn’t reheat as well. That said, leftovers are still great with a splash of cream or milk to loosen.
- Component prep: Zest and juice the lemons ahead and store in a small container. Mince the garlic. Day of, this comes together in under 20 minutes.
- Broccoli Cheese Risotto
- Make it ahead: Risotto is best served fresh — it loses its creamy texture as it sits. If you do have leftovers, reheat gently with a splash of broth and stir well to bring it back together.
- Component prep: Chop the broccoli into small florets and store in the fridge. Shred the cheddar ahead of time (freshly shredded melts much better than pre-shredded). Heat your broth in a separate pot before you start cooking so it’s ready to ladle in.
