Cilantro Lime Baked Salmon

Guyyysssss. I thought I had a relatively relaxing week up until tomorrow when I board a plane for Detroit. I thought I would have some chill days at work and some casual evenings at home unpacking the last few boxes and maybe hanging some things on the walls. I was wrong about all of these things. It comes down to the fact that I’m not very good at just saying NO to some things. I’ve been presented with some really fun writing and photography projects lately and I just want to DO THEM ALL!
So yea, super busy week. But on Thursday! On Thursday I head to Detroit with my team to play in my final playoff tournament of my roller derby career. Deep bittersweet-ness there. If you’re just super duper interested, you can watch live HERE. Our first game of the weekend is at 6pm EDT on Friday.
I’ve been doing my best to eat healthy and avoid that box of wine smiling at me in my fridge. ALSO I had some salmon very similar to this at a restaurant recently and I LOVED it. So, I needed to recreate it at home. This is my attempt:
I’ve mentioned this before but we don’t get much fresh fish here in good ole Nashville, TN (besides catfish) so I typically buy it frozen. Full disclaimer.
I also love this salmon because it’s ridiculously easy to throw together. Just flop your thawed salmon down on some tin foil, blend up the other ingredients, and smother the salmon with it.
I use my food processor for pure laziness.
Just throw the garlic cloves and cilantro in with little to no pre-chopping. And blend it all up.
Pour it evenly over the salmon
Put it in the oven for a bit and behold the yumminessssssss:

- Total Time: 20 minutes
- Yield: 4 1x
Ingredients
- 1– 1 1/2 pounds of salmon
- 2 cloves of garlic
- 1 large handful of fresh cilantro
- 2 tablespoons of olive oil
- small pinch of salt
- fresh ground pepper
- juice and zest of 1 small lime
- optional: 1/8 teaspoon of paprika
Instructions
- Pre-heat oven to 400 degrees F. Line a baking sheet with tine foil and place the salmon on it.
- In a blender or food processor, blend together the garlic, cilantro, oil, salt and pepper, lime juice and zest.
- Evenly spread the lime and cilantro mixture over the salmon and place in the oven.
- Bake for ~12-15 minutes.
- ENJOY!!

- Cook Time: 15 minutes
