Guyyyssss. This week. It has been so long but I can see the weekend approaching and I’m SO ready for it. I’ve been filling every single free moment of my time lately and haven’t done much relaxing just for the sake of relaxing. Despite the fact that my living room is half painted one color and still half the old ugly beige color, AND the fact that the chicken coop really needs a good clean (just to name 2 of the 1,000,000 things I need to do), I’m going to do some relaxing this weekend.
I have some family coming over this weekend to help me with the second installment of the Great British Bake Off Bake Along. We’re baking biscotti and I’m very much looking forward to it!!
In other news- I have a giant mountain of eggs sitting on my kitchen counter at the moment. We’re getting a consistent 5 eggs a day right now and are only eating, on average, about 1 egg per day. I keep telling myself that I’m going to wake up ~15 minutes earlier so that I can eat eggs and toast every morning and then…it doesn’t happen. Maybe one day.
Needless to say, every single person that comes over to our house lately has been walking away with a dozen or more eggs.
And with all of that, welcome to the blog this super simple Greek Yogurt Chicken Salad. It’s easy to make, healthy (no mayo or extra stuff), and super yummy.
I think I’ve mentioned this before but I’m a big fan of chicken salad. I like to make a big ole’ batch of it on Sunday night and then take it for lunches throughout the week. I have a few recipes that I rotate through so that it doesn’t get boring. THIS one is Stephen’s favorite but personally I really like them all.
For this recipe I start with boiled chicken, either chopped or shredded, mixed with a couple spices. I prefer chopped, Stephen likes shredded. So, we alternate.
The Greek yogurt is mixed in and then the grapes, celery, and nuts.
Give it a good stir, season with S&P, and you’re pretty much done. Easy peasy.
I’m a pretty big fan of a good chicken salad sandwich with the fixins.
But, this chicken salad is also good on a bed of lettuce if you’re going for the low carb approach.

Simple Greek Yogurt Chicken Salad

Ingredients
- 3 large chicken breasts, trimmed
- ½ teaspoon of garlic powder
- ½ teaspoon of cummin
- 1 small container of plain greek yogurt, ~5.3 ounces
- ⅔ cup of grapes, quartered
- ⅔ cup of celery, finely diced
- ½ cup of walnuts, chopped
- S&P to taste
Instructions
- Boil the chicken until cooked fully through and then let cool. Once cooled, dice or shred the chicken and place in a large bowl.
- Mix all of the ingredients together in the bowl and season with salt & pepper to taste.
- Serve and ENJOY!!
i love chicken salad but totally forgot it existed. thank YOU for the reminder. i need to make some. and…. you should make your own bread for that sandwich! :)
