I asked recently on Instagram what you wanted to see more of and the overwhelming answer was more EASY, lazy night dinners. So that’s what we are doing today :)

SUPER easy in this case! We’re using the Ocean Mist Quick Cook Sprouts, pre-made pesto (I’ve found a vegan one that I really like), and a package of gnocchi. It all comes together so quickly but is still delicious and SO satisfying.

I posted about the Quick Cook Sprouts before (you can see that recipe HERE) and I’m still very obsessed with them. I’ve always really loved brussels sprouts but don’t always love how long they take to cook. These Ocean Mist Sprouts cook in just FIVE minutes and blow my mind every single time.

What is really nice about the sprouts is that you can open the package, add your seasonings and then just re-seal it before microwaving. Many other packages don’t allow that and being able to season them before cooking makes such a big difference.

How to make this Pesto Gnocchi:

As I mentioned several times, this comes together very quickly!

Start out by bring ing a pot of water to a boil and then adding in the gnocchi. Once the gnocchi are in, you can prepare and microwave the sprouts. They’ll both be done right around the same time.

Drain the gnocchi and add it back into the same pot with the cooked sprouts and pesto. Stir it all together and you’re done! SO SIMPLE.

I served mine with a little bit of parmesan cheese but you could leave that off completely or use a vegan parmesan as desired!

I’m really excited to see y’all making this! I’ve made it several times over the past month and it’s SO GOOD every time. I just keep all of the ingredients on hand so it’s my go to when I don’t know what to make for dinner.

Brussels Sprouts Pesto Gnocchi

You’ll love how ridiculously delicious this Pesto dish is! Great for quick and easy dinners.


Ingredients

Scale
  • ⅔ cup of pesto*
  • 16 oz package of gnocchi
  • 16 ounce package of Ocean Mist Quick Cook Sprouts
  • 1 tablespoon of olive oil
  • Salt and pepper to taste
  • Parmesan for garnish (Violife makes a delicious vegan parmesan!)

Instructions

  1. Cook the gnocchi according to package directions. Once done, drain the water and add the gnocchi back into the pot.
  2. While the gnocchi is cooking, open the package of sprouts and add in the olive oil, salt and pepper. Give it a shake to lightly combine and then re-seal the package. The directions call for you to cook it for 5 minutes but I like a little bite left in my sprouts so I cook them for just 4 minutes.
  3. Into the pot with the gnocchi, mix in the pesto and sprouts until everything is covered in the pesto. Sprinkle with optional cheese and ENJOY!

Notes

For the pesto: I used a simply store bought pesto (trader joes makes a delicious vegan one!) but HERE is my recipe for homemade Vegan Pesto!
