To get this green goddess pasta recipe started, bring a large pot of salted water to a boil—this way, your pasta can cook while you prep the rest of the dish. Once boiling, add the pasta and cook until al dente. Drain and set it aside.

STEP #1: Make the pasta sauce – After wilting the spinach, blend wilted spinach, tofu, milk, lemon juice, Italian seasoning, garlic powder, nutritional yeast, salt, pepper, herbs, hemp seeds, and chives.

STEP #2: Toss the sauce with pasta – In the same skillet you cooked the spinach, add in the sauce and heat over low heat, stirring often. Once heated through, add in the pasta and toss to combine. Serve with a sprinkle of parmesan and fresh herbs and ENJOY!

Ingredients 

  • 1 pound pasta
  • 10 oz bag of spinach
  • 1 teaspoon extra virgin olive oil
  • 1 block silken tofu, about 15oz, drained
  • ½ cup plant-based milk
  • 2 tablespoons lemon juice
  • 2 teaspoons Italian seasoning
  • 1 teaspoon garlic powder
  • 4 tablespoons nutritional yeast, or sub parmesan cheese/vegan parmesan
  • salt and pepper to taste, I added 1/2 tsp of salt and 1/2 tsp of pepper
  • ½ cup packed fresh herbs, I used a mix of fresh basil, dill, and tarragon
  • cup hemp seeds
  • cup green onions or chives

Instructions 

  • Bring a large pot of salted water to a boil. Once boiling, add in the pasta and cook to al dente. Drain and set aside.
  • Meanwhile, make the green goddess pasta sauce. In a large skillet over medium heat, add in the oil. Once hot, add in the spinach, a little at a time as needed, and keep cooking until it’s all wilted. This will only take a few minutes.
  • To a blender, add in the wilted spinach, tofu, milk, lemon juice, Italian seasoning, garlic powder, nutritional yeast, salt + pepper, herbs, hemp seeds, and chives. Blend on high until creamy and fully liquified.
  • In the same skillet you cooked the spinach, add in the sauce and heat over low heat, stirring often. Once heated through, add in the pasta and toss to combine.
  • Serve with a sprinkle of parmesan and fresh herbs and ENJOY!
