Storage Containers:

🥡 I bought a multi-pack of THESE Snapware containers (affiliate link) at Costco a year ago and we really love them. This particular 5.5 cup size is my favorite as it allows me to fit a complete serving of a meal without it being too crowded.

Meal Prep Tips:

  • I like to do my grocery shopping on the same day that I meal prep or else some things will get lost in the abyss that is my fridge.
  • Monday: This one is a pretty easy weeknight dinner but if you want to prep it ahead of time, you can go ahead and make the base of the soup and then before eating, heat it up and add the cooked pasta. You could also prep the veggies ahead of time to make cooking easier.
  • Tuesday: This comes together so quickly but if you’re making the homemade pesto, I suggest making it ahead to save time.
  • Wednesday: As desired, you could meal prep this whole recipe by roasting the veggies in advance and then heat them in the air fryer night of.
  • Thursday: This is a great meal prep recipe! OR, you can have all of the veggies prepped and the spices measured out to make it a quick weeknight meal.
  • Friday: This is best made night of but you could go ahead and prep and vegetables and/ or rice to eat with it.
  • BONUS: A quick and easy weekend breakfast (or even weekday really!).
