Pomegranate Champagne Cocktail

I teased this Pomegranate Champagne Cocktail on my Instagram a few weeks ago and got SO many people asking for the recipe. It’s finally here and it’s SO GOOD!
I had 3 wishes for this cocktail: 1) I wanted it to be simple so that it could easily be made at holiday parties, 2) I wanted it to be delicious (duh!), and 3) I wanted it to be PRETTY! Everyone loves a pretty holiday cocktail. Somehow, it makes the drink taste even better (if that’s possible). I’m happy to report that all THREE of my wishes were granted in this cocktail!
Not a pomegranate fan?? This would work well with quite a few different flavors. I originally wanted to make this with blood orange juice but unfortunately, blood oranges aren’t quite in season yet. But they will be just in time for the holidays, so you should give that a try! Cranberry juice is another great holiday-appropriate option.
And I wouldn’t be a good friend if I didn’t remind you to drink responsibly! This cocktail IS very tasty, so I can see why you might want more than one of them, but be smart, okay? Eat food with your alcohol and consider swapping out a different beverage, such as sparkling water or grape juice, for the alcohol in your second cocktail.

Ingredients
For the rosemary simple syrup:
- ½ cup of white sugar
- ½ cup of water
- 2 sprigs of rosemary
For a single cocktail:
- ¼ cup of pomegranate juice
- 1 tablespoon or more to taste of the rosemary simple syrup
- 1 cup of champagne
- for serving: extra sprigs of rosemary pomegranate seeds
For a pitcher:
- 6 ounces of pomegranate juice
- 1 bottle of Korbel® Brut
- 4 tablespoons of rosemary simple syrup
- for serving: extra sprigs of rosemary pomegranate seeds
Instructions
To make the simple syrup:
- Combine the sugar, water, and rosemary in a small saucepan and heat to simmering. Simmer for 2 minutes and then remove from heat. Let steep for 30 minutes before discarding the rosemary sprigs. Store in the fridge in a sealed container.
For a single cocktail:
- Mix all ingredients in a cocktail glass, garnish with pomegranate seeds and rosemary, and serve.
For a pitcher:
- Mix all of the ingredients in a pitcher and garnish with fresh rosemary and pomegranate seeds.
