Vegan Corn Fritters

Since having Jemma, I’ve started thinking a lot more about the kinds of foods that we cook and the ingredients that we use. Now that she’s eating with us, I just care more. So I’m happy to say that brands like Del Monte fit that bill. I trust their products when I’m cooking and feel good about feeding the best possible vegetables to my daughter.

I used their Del Monte® Fresh Cut® Golden Sweet Corn Cream Style for this Vegan Corn Fritters recipes and I’m really excited to share it with you!

How to Make Vegan Corn Fritters

One of my favorite parts about this recipe is how incredibly easy it is! All of the ingredients get mixed together in one large bowl which is pretty much all of the work that this recipe requires.

Vegan Corn Fritters

Oil is heated in a large skillet and the batter is spooned right into the skillet and slightly flattened out to create the fritters. They’re fried for 3-4 minutes on each side to get them a nice golden brown color. Once they’re crispy on both sides, they’re ready to eat after cooling off ever so slightly. SO EASY, right?

The Del Monte® Fresh Cut® Golden Sweet Corn Cream Style in this recipe is largely what make the fritters so delicious and I can’t wait for you to try them!

Vegan Corn Fritters

Ingredients

Scale
  • 1 can of Del Monte® Fresh Cut® Golden Sweet Corn Cream Style
  • ⅓ cup of cornmeal
  •  cup of all purpose flour (can use a 1-1 gluten free substitute)
  • 2 teaspoons of baking powder
  • 1 teaspoon of salt
  • ½ teaspoon of garlic powder
  • ¼ chopped green onion
  • 12 tablespoons of maple syrup
  • Oil for frying

Instructions

  1. Combine all of the ingredients in a large bowl and mix until fully combined.
  2. In a large skillet, pour enough oil in to fully coat the bottom with a thin layer. Heat over medium heat.
  3. Using a cookie scoop (about a heaping tablespoon), pour the batter into the skillet and lightly pat down the batter to flatten a bit. Cook for 3-4 minutes on each side until golden brown.
  4. Garnish with a handful of chopped green onion and ENJOY!
