Warm Pumpkin Latte

Happy Wednesday, friends! Are you enjoying this cool weather as much as I am (something I never thought that I would say!). To be fair, “cool weather” right now in Nashville means that it’s currently about 70 degrees outside with a high of 80. That to me is PERFECTION. This weather means that I can enjoy a cold smoothie OR one of these Warm Pumpkin Lattes. Needless to say, I’m not complaining.

Today I’m here to talk to you about a super cool new product from Vitamix (have I ever told you about my love affair with Vitamix!?) called the Perfect Blend Smart Scale. It’s exactly what it sounds like: a smart scale that helps you make the perfect blends including smoothies, lattes, soups, snacks, and so many other fabulous recipes. The scale comes with an easy to use app for your smart phone or tablet which has TONS of amazing recipes on it (like, ahem, this Warm Pumpkin Latte).

I’m a HUGE fan. Especially when it comes to smoothies (and you know how much I love smoothies), sometimes I’m really shooting in the dark and just aimlessly adding things to the blender. It often turns out well but it also quite often doesn’t. The nice thing about this scale is that it tells you AND shows you precisely how much of each ingredient to add by using the scale to weigh each item. That way, I’m never again going to end up with a smoothie that has WAY too many chia seeds in it <<<that’s a real thing that has happened and it’s no bueno!

As you can see in the video, the app gives you complete nutritional info but it also gives you the ability to scale each recipe. So, if you’re making this Warm Pumpkin Latte for 2 people, it’ll adjust everything for you. Or, say you want to make a smaller smoothie that’s just 100 calories, it can do that too!

In my own diet, I REALLY struggle with portions so this is PERFECT for me! The app even has pre-designed meal plans that will automatically generate a shopping list for you and everything.

Warm Pumpkin Latte with the Vitamix Perfect Blend

Ingredients 

  • 240 g about 1 cup of cashew milk
  • 120 g about 1/2 a cup of HOT and strong coffee
  • 50 g about 3 tablespoons of canned pumpkin
  • 1 g about 1/2 teaspoon of pumpkin pie spice
  • 5 dates, pitted

Instructions 

  • Add all of the ingredients to the base of a high speed blender.
  • Blend for 30-60 seconds or until there are no date chunks left.
  • Serve immediately sprinkled with a dash of nutmeg or more pumpkin pie spice.
  • ENJOY!!!
