Kiwi Watermelon Fruit Popsicles

These Kiwi Watermelon Fruit Popsicles are made of 100% fruit and completely delicious and satisfying for hot summer days.
OH popsicles. It is most certainly that time of year. Well, it’s mostly that time of year. Here in Nashville we’ve been getting an odd amount of rain and storms which makes it feel a bit more like it’s April (except really really hot). I’m not complaining though because my summer garden is LOVING it. Last night I picked a big basket full of butternut squash, zucchini, and green beans (as you might have seen from my snapchat last night).
It’s been a while since I shared a popsicle recipe here. The last time was these Sangria popsicles that I shared over 2 years ago. Oh! I should make those again soon!
I like keeping a bunch of fruit popsicles on hand during the summer (and throughout the year really) to satisfy my sweet tooth. Since it’s just pure fruit, I never feel guilty when I find myself eating 2 or even 3 of these in a row :)
They’re also coincidentally VERY easy to make. Like, blend fruit, freeze, blend fruit, freeze. And then, eat. That easy.
I started with the kiwi for the top of the popsicles and then (making it the bulk of the popsicle) followed it up with the watermelon.
The hardest part is waiting for them to freeze. But I’ve learned to always have extra fruit to eat to hold me over until the cold, refreshing popsicles are finally ready to devour.
THIS is the popsicle mold that I have. I prefer the ones that allow me to use popsicle sticks but I hear that THESE are great for kids because it helps catch the mess of the dripping popsicle.

- Total Time: 2 hours 5 minutes
- Yield: 8 popsicles 1x
Ingredients
- 4 kiwis, peeled
- 3 cups of seedless watermelon
- optional if necessary: a splash of water (I used coconut water to help blend up the kiwi. The watermelon needed no extra liquid)
Instructions
- You can choose which fruit you want to blend first. Remember that whichever fruit you pour into your mold first will be the fruit on the top of the popsicle while you’re holding it.
- Add the kiwi into a blender or food processor and blend until fully liquefied. For the kiwi, I added in a splash of water to help. If you don’t have a blender or food processor, you can always mash the fruit thoroughly with a fork.
- Pour the kiwi into the bottom of your popsicles molds and place in the freezer for at least an hour.
- When ready, blend up all of the water melon and pour it into the popsicle molds on top of the mostly frozen kiwi.
- Place the popsicle sticks into the watermelon puree and place the mold back into the freezer for at least an additional hour.
- Once done, run the mold under warm water to help release the popsicles. ENJOY!!
