Tempeh Bacon, Lettuce, and Tomato Sandwich- this vegan blt sandwich is a great vegetarian alternative to one of your favorite sandwiches! It’s easy to make and so satisfying!

Surely you knew that I was going to go here after I posted the tempeh bacon recipe yesterday! SURELY you know me that well by now ?

I fact, I have several recipes planned that use this tempeh bacon and they’re all SO GOOD. (do I say that about every single recipe that I post at this point?- yes! Is it simply because I love food and I’ve been making some really amazing stuff lately- you betcha!).

But this bacon- FINGER LICKIN’ DELICIOUS! Let’s put it in a sandwich, shall we?

You might be asking yourself “wait, what IS tempeh bacon? This is simply marinated tempeh that is cooked in the oven until lightly crispy and perfectly savory and salty.

How to make a Vegan BLT:

I’m not going to go into how to make the vegan bacon since we did that in yesterday’s post. You can read all about it HERE.

Once the bacon is made, it’s simply a matter of throwing your sandwich together.

I smeared vegan mayo on one piece of the bread and mashed avocado onto the other piece of the bread (because apparently I’m incapable of making a sandwich without avocado on it).

Tomato, lettuce, and then the vegan bacon are all generously stacked onto the toasted bread AND that’s pretty much it.

You know how to make a BLT, right?

Ingredients 

  • 4-6 slices of tempeh bacon
  • 2 slices of toasted bread
  • vegan mayo
  • ¼ of an avocado, mashed
  • tomato slices
  • several leaves of lettuce

Instructions 

  • Start by making your tempeh bacon and toasting your bread.
  • Load up your sandwich by spreading the mayo on one slice of the bread and the masked avocado on the other slices. Pile on the lettuce, tempeh bacon, and tomato.
  • Slice and ENJOY!
