After 100+ tofu recipes, I’ve learned that a good tofu marinade isn’t really about the recipe but MORE abotu the formula! Once you know the five parts, you can mix up any of the 6 different flavors (or even invent your own!) in about 5 minutes with what’s already in your fridge.

The Tofu Marinade Formula
Every marinade in this post is built from the same 5 basic parts. If you get the balance right and your tofu will come out flavorful and juicy instead of salty or flat. Here are the elements:
- Fat – this includes oils such as olive or and sesame oil, as well as peanut butter. It carries flavor and helps the tofu brown.
- Acid – lime juice, rice vinegar, apple cider vinegar, or balsamic vinegar all work well! This adds brightness so the marinade doesn’t taste heavy.
- Salt/ umami – this includes soy sauce, BBQ sauce, or just plain salt. This is the part tofu needs the MOST. Use tamari or coconut aminos for gluten-free.
- Sweet – maple syrup or honey work well! A little balances the acid and helps with caramelization. Really any liquid sweetener works including agave.
- Aromatics – garlic, fresh ginger, herbs, and spices! This is where each flavor gets its personality.
Starting ration for a 14-16 oz block of tofu: use about 2 tablespoons of fat, 2-4 tablespoons of acid, 2-4 tablespoons of soy sauce (or about 1/2 teaspoon of salt), 1-3 tablespoons of sweetener, PLUS 2 cloves of garlic and your spices.
Type of tofu to use: super-firm tofu is the easiest since it doesn’t require pressing but extra-firm tofu also works great after a quick press (here is my guide on pressing tofu!). Do NOT use silken tofu!

6 Easy Tofu Marinade Flavors
You can find the FULL recipes down in the recipe card but I want to talk through all of them first.

- Cilantro Lime Tofu Marinade – Olive oil + lime juice + salt + maple + cilantro and garlic. Bright and fresh. Serve it in tofu tacos, burrito bowls, or my Spicy Tofu Burritos.

- BBQ Tofu Marinade – Olive oil + apple cider vinegar + BBQ sauce (which performs double duty as the salty & sweet) + garlic, onion powder, and paprika.
Made for Grilled Tofu or Pineapple Tofu Skewers!

- Teriyaki Tofu Marinade – Sesame oil + rice vinegar + soy sauce + maple + garlic and ginger.
This is the all-purpose one – DO IT in a Tofu Stir-Fry or Tofu Lettuce Wraps.

- Balsamic Tofu Marinade – Olive oil + balsamic + salt + maple + garlic.
Slightly sweet and tangy. Great on my Tofu Salad or tossed with pasta dishes.

- Fajita Tofu Marinade – Olive oil + lime juice + salt + maple + chili powder, cumin, smoked paprika, and garlic.
Smoky and bold, and perfect with peppers and onions in tortillas.

- Thai Peanut Tofu Marinade – Peanut butter + lime juice and rice vinegar + soy sauce + maple + garlic and ginger.
Rich and slightly indulgent. Pairs perfectly with Tofu Satay or noodle bowls.

Freezer Tofu Marinade Packs
I talk a lot about freezing tofu in THIS which I highly recommend checking out. Freezing tofu (when you have the time) is a GREAT way to add a nice bit of texture to your dish.
Tofu naturally has a lot of moisture in it and when you freeze it, that moisture crystalizes and creates these little pockets throughout the tofu. Once the tofu is thawed and and liquid is gone, the pockets are left in the tofu which results in a meatier texture that I really love. The pockets also works well to soak up flavor!
Can I freeze marinated tofu? Why YES you can! Follow the recipe as written and once everything is mixed together and the bag is sealed, place it in the freezer. It’ll keep for about 6 months in the freezer and is GREAT for lazy dinners. Take the bag out the morning that you want to enjoy it for dinner and let it thaw in the fridge throughout the day. Once thawed, cook as usual. SO GOOD!

How to make the best tofu marinade
- Prep your tofu – If using extra-firm tofu, be sure to press it for about 15 minutes (you can skip this step if using super-firm tofu), then cube it, slice it, or tear it into bite sized chunks (this is my favorite!).
- Combine marinade ingredients in a bag or tupperware – mix everything right in your ziplock or ziptop bag. You can also do this in a sealable shallow container so there’s less waste (this is what I usually do).
- Marinate – add in your tofu pieces in a single later and refrigerate for at least 30 minutes, or even overnight. This is also when you can throw it into the freezer as desired.
- Cook and sauce it up – lift the tofu out of the marinade and then air fryer it, bake it, or pan fry it to perfection. Simmer the leftover marinade with a cornstarch slurry (2 tablespoons of water + 1 teaspoon of cornstarch) for an easy sauce.
Tofu Marinade Tips
- Taste the marinade first – the marinade should taste a little too strong on it’s own but that means it’ll be perfect when the tofu mellows in out.
- Tear the tofu instead of cubing it – when you tear it, the rough edges grab more marinade and crisp up so much better.
- Keep it in a single layer – every piece should be touching the mainade and flipping the bag halfway through helps.
- Pat off excess before cooking – too much liquid in the pan means steamed tofu instead of a nice golden and crispy tofu.
- Turn leftovers into a sauce – simmer the remaining marinade with ~2 tablespoons of water + 1 teaspoon of cornstarch for 3-5 minutes until thickened. This works well with every flavor EXCEPT the peanut sauce flavor.
How do I cook marinated tofu?
You can use these marinades in almost any recipe to cook tofu. But if you’re looking for various different ways to cook your tofu, here are some of my favorites that all result in crispy, golden brown tofu:
- Air Fryer Tofu – my weeknight HERO and the crispiest with the least effort. This is easily my favorite way to cook tofu.
- Baked Tofu – always a good option!
- Sauteed Tofu – honestly, cooking tofu in a frying pan is my favorite way to do it!
- Grilled Tofu – SO fun in the summer!
- Tofu Skewers – perfect for teriyaki or the peanut marinade.
- Fried Tofu

Frequently Asked Questions
I recommend for at least 30 minutes – this alone will make a big difference in flavor! A few hours or overnight is even better. Keep it covered in the fridge the whole time though.
For firm or extra-firm tofu, YES! About 15 minutes of pressing removes water so there’s more room for flavor. Super-firm tofu doesn’t need pressing, which is a big reason it’s what I reach for most.
Honestly, mostly on the outside! Tofu is FULL of water so the marinade doesn’t soak all of the way through. Pressing it and then tearing it for more surface area help it take on more flavor for sure.
Nope! Freezing and thawing the tofu already pushes out a lot of water, so you can cook it straight from the bag once thawed.
Super firm or extra firm tofu! Both of these hold their shape well and crisp up in the pan (or air fryer). Silken tofu is far too delicate for marinating and cooking in the same way.

Cilantro Lime marinade:
- 14-16 ounce block of tofu
- 2 tablespoons of olive oil
- 2 tablespoon lime juice
- 1 ½ tablespoons maple syrup/ honey
- ½ cup cilantro leaves chopped
- 2 cloves of garlic minced
- ¼ teaspoon salt
BBQ marinade:
- 14-16 ounce block of tofu
- 2 tablespoons of olive oil
- ¼ cup favorite BBQ sauce
- 2 tablespoons of apple cider vinegar
- 2 cloves of garlic minced
- ½ teaspoon onion powder
- ½ teaspoon paprika
- ¼ teaspoon salt
- Dash of liquid smoke, optional
Teriyaki marinade:
- 14-16 ounce block of tofu
- 1 tablespoon of olive oil
- ¼ cup of soy sauce
- 2 teaspoons of fresh grated ginger
- 2 cloves of garlic minced
- 3 tablespoons of maple syrup
- 2 tablespoons rice vinegar
Balsamic marinade:
- 14-16 ounce block of tofu
- 2 tablespoons of olive oil
- 3 tablespoons of balsamic vinegar
- 2 tablespoons of water
- 2 tablespoons of maple syrup
- 2 cloves of garlic minced
- ¼ teaspoon of salt
Fajita marinade:
- 14-16 ounce block of tofu
- 2 tablespoons of olive oil
- ¼ cup lime juice
- 2 tablespoons of water
- 1 teaspoon of maple syrup
- ¼ teaspoon of salt
- ¼ teaspoon ground cumin
- 2 cloves of garlic minced
- 1 ½ teaspoons smoked paprika
- 1 teaspoon onion powder
- 1-2 tablespoons chili powder
- Optional: dash of liquid smoke
Thia Peanut marinade:
- 14-16 ounce block of tofu
- ¼ cup of peanut butter
- 1 ½ tablespoons soy sauce
- 1 ½ tablespoons lime juice
- 1 tablespoon of rice wine vinegar
- 2 teaspoons of maple syrup
- 2 cloves of garlic minced
- 2 teaspoons of fresh grated ginger
Instructions
- Prep your tofu: Follow my instructions HERE for pressing tofu and cut it into your desired shapes. I like to cube mine into bite sized pieces but really anything works! Set side.
- Make the marinade: I like to whisk together my marinade directly in the dish/ bag that I plan to marinate the tofu in. A plastic baggie, stasher bag, or really any kind of shallow resealable container works well. Add all of the ingredients (minus the tofu) and whisk until fully combined.
- Add the tofu: add in your tofu pieces and let marinate for 30 minutes or even overnight. See notes above for freezing. Ideally this will marinate for a good few hours but even just 30 minutes makes a big difference.
- Cook as desired and ENJOY! As desired, you can use the leftover marinade to make a sauce for your tofu (this works with all of the marinades EXCEPT the peanut marinade). Add it into a saucepan with a cornstarch slurry (2 tablespoons of water + 1/2 tablespoon of cornstarch) and cook over medium heat until thickened (about 3-5 minutes). It makes for a great sauce to put on top of the tofu!
Notes
- Freezer packs: Seal the tofu and marinade in a freezer bag and freeze for up to 6 months. Thaw in the fridge during the day and cook – no pressing needed.
- Storage: Keep uncooked marinated tofu covered in the fridge for up to 2 days. Cooked tofu keeps 4-5 days in an airtight container.
- Gluten-free: Swap soy sauce for tamari or coconut aminos.
- Nutrition: Calculated for the cilantro lime marinade only.

I loved tofu when tofu wasn’t trending way back in the 70’s. I like the taste of tofu but I’m looking forward to trying the marinades for tofu I use in stir-fry dishes. Miso soup with tofu is one of my favorite things but I’m ready to be more adventurous. Thank you for so many ideas and wonderful information on not just tofu but also on eating more plant-based meals. BTW I also love Tennessee. My mother’s family is from Tullahoma.

(Marinated for about 5 hours) I also used your advice on how to press it with a cast iron pan ( pressed for a few hours and changed out the cloth in between) and the air fryer suggestions as well. Once you have the marinated the tofu and put it in the freezer. Do you press the tofu again once it thaw? After taking it out the freezer?
I made the teriyaki marinade with extra ginger and marinated the tofu slices for several hours. My husband cooked them in a cast iron pan on high heat on the grill, just like a steak. They were fantastic!! My husband loved them, which is a huge plus, for he remains mildly skeptical of my plant-based meal plan. I love that you cross the globe with your array of flavor combinations.
